vegan apple pie coffee cake

I made my own pie filling and then followed Lolo’s recipe fairly closely, and I ended up with several days’ worth of dairy-free goodness, onto which I always dumped a heaping pile of Haagan Dazs (sorry, Lolo). I imagine the cake is even better when it’s properly covered instead of left sitting out night after night. Hands down, this is one of the best desserts I’ve ever eaten.
